Speculaas!

During her stay in Australia, Niki had become increasingly curious to the nature and origin of the Dutch 'speculaas' cookies, having seen Hans' greedy imbibement of them mainly at Ton and Ellen's. So on her return, with the help of Hans' friend Jacomien in Amsterdam, who sent us a box of 'speculaaskruiden', and a recipe from the Internet, the speculaas cookies as shown in the picture were the (I may say Yummy) result.

Ok, so there's no windmills on them, as is traditional on 'the real thing'; and yes, Ok, moose-shaped speculaas is perhaps a tad culturally inappropriate, as are apple-shaped cookies, but the bat speculaas, Niki thinks, is entirely in tune with her memories of her favourite animals, flying foxes, in the Booyong rainforest and the Alstonville bat haunt close to Pearces Creek.

I believe additional batches, with planned spice and shape improvements (such as the use of almonds) are in the offing! Yum again!
